It’s easily one of my favorite desserts. No, to be fair, this is no Basque cheesecake. But it is super tasty. And the best part is that it takes just a few simple ingredients you may already have on hand. (I definitely did. That’s why I made it over the weekend.) 10/10 would make again. Honestly, I could have eaten the whole cake myself. Because, for one, yum. But also, it was light, fluffy, and refreshing—which is exactly what I want out of dessert sometimes...especially as it starts warming up for summer. Here’s what I did differently: 1. Accidentally added too much starch 🤦🏼‍♂️ 2. Added vanilla bean because I’m extra like that. 3. Served with chocolate balsamic poached pears 🍐  As for the fitness... This cake crushes it from a fitness perspective. Usually, I score desserts on a curve, but this recipe didn’t even need it... Not only does it fit my protein and plants framework, but the macros are solid too—meeting my protein to carb and fat ratios as well 😍  As. A. Dessert.  Don’t think there’s much I’d even do differently here. Sure, you could use a nonfat yogurt or go with egg whites instead of whole eggs. But I don’t know if that’s juice worth the squeeze in this case. We don’t have to save calories, carbs, and fat with every recipe. And especially not with desserts. The one thing I am curious about, though, is what would happen if we used whipped egg whites 🤔 ...could make it even lighter, fluffier, and just so happen to mean less fat too.
