I stir like she stirred. I wait like she waited 😌. Paadti-Style Mutton Peradtal (Slow-Cooked, No Pressure Cooker) Here’s my simple, slow-cooked recipe 1kg mutton bone in .  𝐒𝐓𝐄𝐏 𝟏: 𝐌𝐚𝐫𝐢𝐧𝐚𝐭𝐞 𝐭𝐡𝐞 𝐌𝐮𝐭𝐭𝐨𝐧  In a bowl, combine: 	•	Mutton 	•	Yogurt 	•	Turmeric powder 	•	Salt Massage everything well into the meat. Let it sit for at least 30 minutes, or overnight for deeper flavour. 𝐒𝐓𝐄𝐏 𝟐: 𝐆𝐞𝐭 𝐘𝐨𝐮𝐫 𝐁𝐚𝐬𝐞 𝐆𝐨𝐢𝐧𝐠 🔥 	1.	Heat about 2 tbsp ghee in a wok on medium flame. 	2.	Add: 	•	Curry leaves 	•	Cardamom 	•	Star anise 	•	Cloves 	•	Cinnamon 	•	Bay leaf 	3.	Once the curry leaves splutter, add: 	•	Chopped onions 	•	Ginger garlic paste 	•	Green chillies Sauté until the ghee separates — around 4–6 minutes. 𝐒𝐓𝐄𝐏 𝟑: 𝐋𝐚𝐲𝐞𝐫 𝐭𝐡𝐞 𝐅𝐥𝐚𝐯𝐨𝐮𝐫 ( reduce the spice powders if you like a lighter consistency) 	4.	Add the marinated mutton and chopped tomatoes ( Cili padi - optional) 	5.	Mix in the spice powders: 	•	2 tbsp chili powder 	•	2 tbsp Kashmiri chili powder 	•	3 tbsp meat curry powder 	•	2 tbsp coriander powder 	•	1 tbsp garam masala 	•	2 tsp cumin powder 	•	2 tsp fennel powder Mix well and cook for about 10 minutes, letting the flavours meld. 𝐒𝐓𝐄𝐏 𝟒: 𝐒𝐥𝐨𝐰 𝐂𝐨𝐨𝐤 𝐰𝐢𝐭𝐡 𝐋𝐨𝐯𝐞 🫶🏾 	6.	(Optional) Place two metal spoons in the wok — just like Paadti did. 	7.	Cover and cook the mutton low and slow for at least 2.5 hours, stirring occasionally. 	8.	Once the meat is tender, ( coconut milk - optional ) increase the flame and stir till you reach your preferred consistency. 	9.
