@sanne: This salmon poke bowl is part of my 30-minute dinner series - it’s fresh, summery, anti-inflammatory, and the kind of clean meal that actually leaves you satisfied. Salmon Poke Bowl 3/4 cup cooked white rice 3 oz sashimi grade salmon ( 1 tbsp soy sauce, 1 tsp rice vinegar, 1 tsp sesame oil, 1/2 tsp honey or maple syrup) 1/4 sliced cucumber w/ splash rice vinegar and salt 1/4 cup diced mango 1/2 avocado 2 umeboshi ( pickled plum) 2 tbsp green onions 2 tsp furikake topping 1. Cook the rice 2. Marinade the salmon with the soy sauce, rice vinegar, sesame oil and sweetener. (For at least 20 min but overnight is best) 3. Cut up the cucumber, mango and avocado 4.
