Fun fact: a combi oven is a type of oven that uses steam and convection cooking to achieve precise temperature control, similar to a professional sous vide setup but without the water bath. It’s a solid tool for home cooks who want restaurant level precision, but that price tag is crazy, so I scienced the s*** out of my oven & made my own! I duped a combi oven’s Shrimp Boil by making a few adjustments. Here’s how… 1. I preheated my oven to 425°, and placed a ramekin filled with hot water on the bottom rack. This created some humidity to prevent dryness. 2. I parcooked my potatoes first, seasoning them and tossing in butter, covering in foil, then roasting for 10 minutes. 3. I removed the foil, added the corn to the sheet pan and roasted for another 10 minutes. 4. Tossed my sausage and shrimp with seasoning and butter, spreaded evenly on the pan, & popped it back in the oven. 5. I roasted that for about 8 minutes, basically till my shrimp got pink. 6. Hit it with lemon juice and parsley for garnish. I was still able to get the steam from the water filled ramekin plus I cooked at high heat and still maintained juiciness!
