One thing I love about simple syrup in an Old Fashioned is how easy it is to modulate the sweetness of the drink. One sugar cube is way way way too sweet.

A sugar cube is like 4 grams. Two sugar cubes is just a tad more than a quarter ounce. One sugar cube in an equal amount of water is basically a quarter ounce of simple syrup(1:1). A sugar cube is absolutely not too sweet.

I think you want to die on this hill. I’ve bartended in New York, LA and Phoenix and have worked at reputable places that did sugar cube - it’s nostalgia, its style and it can be done right. ¯\_(ツ)_/¯

Sorry, you’re doing something wrong if you can’t make it dissolve when muddling your sugar cube with bitters. Like serious operator error. Also, simple syrup wasn’t a thing when this drink was invented, so…🤣🤡
