if u're doing two shakes, a reverse dry shake will always be superior. i didnt agree with this until last week, my manager proved me wrong. reverse dry shake actually makes the texture wayyyyy better

I saw in your “Two in the Pink” video that you use aquafaba. Do you use a specific brand or just leftovers from canned chickpeas? Trying to eliminate eggs behind the bar at my restaurant. So many allergies these days.

Those wee milk frother gizmos are great for this. shake with ice, hawthorn strainer into other half of the shaker, froth with the little milk frother whisk, then fine strain into the glass. Works pretty well.

When I started at the place I am working now, I was told that the fee foam just basically works a lot better with the reversed dry shake, and that's how we all do it here. After all these years regular dry shake might actually feel weird for me. 😂 Personally I think the separated foam looks better but I hear you about the drinking part.

Try the dry shake without the lemon juice and then add it for the wet shake. A bartender friend of mine suggested it and wow! The foam comes out perfect. Not sure why but it has worked for me. Awesome content as always!
