Ingredients (2 pax): • 220g pasta • 2 medium zucchini • 300g fresh prawns • 1 burrata (for stracciatella) • ½ lemon zest • ½ glass white wine • 2 garlic cloves • Olive oil, fresh parsley, salt Instructions: Boil zucchini in salted water for 5 min. Blend with olive oil, salt, and a little cooking water until smooth. Cook pasta in the same water. Clean prawns, cut into pieces. In a pan, sauté garlic in olive oil, add prawns, cook 30 sec, deglaze with white wine. When alcohol evaporates, add zucchini cream, cook 2 min. Add al dente pasta, finish cooking in sauce. Plate and top with stracciatella, lemon zest, and parsley.
