Paneer Changezi This is my favourite dish to order in a dhaba but it's so easy that you can make it at home. Ingredients: Paneer slices - 250 g Tomato puree - 1 cup Yogurt (curd) - ½ cup Fried onions - ½ cup Cashews-10-12 Ginger-garlic paste - 1 tbsp Oil - 2-3 tbsp for frying Ghee - 1 tbsp Kasuri methi - 1 tsp (crushed) Coriander powder - 1 tsp Turmeric powder - ½ tsp Red chilli powder - 1 tsp Sugar - ½ tsp (optional) Bay leaf - 1 Cloves-2-3 Black peppercorns - 4-5 Green cardamom - 2 Cumin seeds - ½ tsp Water as required Salt to taste Chopped fresh coriander - 2 tbsp (for garnish) Method: Heat 1-2 tbsp oil in a pan. Lightly coat paneer slices with red chilli powder, turmeric, and salt. Shallow fry until golden on both sides. Remove and keep aside. In a grinder, blend fried onions, yogurt, and soaked cashews into a smooth paste. Keep aside. Heat ghee + little oil in a kadhai. Add cumin seeds, bay leaf, cloves, cardamom, and peppercorns. Sauté for a few seconds until aromatic. Add ginger-garlic paste and sauté till raw smell goes. Add tomato puree and cook till oil starts separating. Now add the onion paste and stir well. Add coriander powder, turmeric, red chilli powder, salt, and optional sugar. Cook the masala on medium flame till oil leaves sides. Add little water to adjust gravy consistency. Add the fried paneer slices into the gravy. Crush and add kasuri methi. Mix gently. Simmer for 5 minutes on low flame. Garnish with chopped coriander leaves.
