Sushi grade does exist lmao. Sushi grade salmon is salmon that has been flash frozen and picked clean of parasites.

I buy farmed salmon at Costco frequently. Freeze it for a few days, then do the salt/sugar curing. I make sashimi, poke bowls, etc. ZERO issues. (Fillets last properly wrapped in the fridge about 4 days safely).

sushi grade" (quick google) is fresh fish that never reaches below a certain temperature as well as a couple other safety things. so idk what this guy is saying. Google is free and .gov/.org are reputable sources
