Time to turn them into something very special —Chicken Kottu! Think of it as Sri Lanka’s answer to egg fried rice, but with chopped-up roti, fiery curry, and that unmistakable street food energy. All mixed together with the distinct clatter of metal paddles on a hot plate. Here’s how I do it: 1. Heat oil in a pan, toss in a handful of sliced onions, greens, carrots and any other veg you like. Then scramble in an egg with a pinch of salt and pepper. 2. Add chopped-up leftover rotis (or Malabar parotta) and let them crisp up. 3. Pour in a small bowl of leftover chicken curry—gravy and all—mixing it in till the roti soaks up all that goodness. Add a splash of water or some more gravy if you need, but ensure you don't add to much liquid, turning it all to mush.
