If you have a home server and are comfortable self hosting stuff that's a little more advanced than Plex and Jellyfin, I highly recommend TubeArchivist! It's made specifically for archiving YouTube videos and can even be bundled with a plugin for Jellyfin that adds a special section just for YouTube videos

I used a different downloader but I’ve downloaded 1000+ of my favorite YouTubers videos in the past month or two. I plan to burn them onto DVDs as well soon
