Home storage and commercial storage are two completely different. When you’re storing for a home scenario, you can play as loosey goosey as you want to risk. But when you’re on a commercial scale and you have hundreds of customers and government agencies to answer to, you do what the agencies say. And put the fruits in the fridge.

It also depends if they are delivered refrigerated or not. If they cold when they come in then they’ll sweat and go bad in like a day if you leave them out and they get back up to room temp

Ask health inspector. Aside from meat tomatoes are most important temperature control.

I'd love to see the people that put rude comments spend a week in a kitchen. Working 12 hour days doing prep all morning. Then as soon as doors open ticket printer doesn't stop talking until shift is over.

people don't seem to understand what they do in their kitchen woupdn't fly in a restaurant. because I don't store tomatoes in the fridge doesn't mean it is practical to do the same thing when you serve people

I strongly disagree with the last part if I make a dish were tomato is the star I want them to taste as good as possible and would do the ekstra work to store them the best way for that

the same is true for cheese! take it right out of the fridge and cut a chunk, it will be less tasty than if you let it sit for 2 or 3 min, it will warm up and have more aroma and taste

Remington Borson :
correct. refrigeration is simply a way to control the ripening process.

Anything touched by the sun like fruits and vegetables is generally better kept out at a room temperature?, the flavour and texture of these things will be better. Then they would be then if they were stored in the fridge.
Some things like onions especially can cause rapid mould growth in fridge.
However, this all comes down to how long exactly you are holding on to the products, if it's going to be there for an extremely long periods of time, then put it in the fridge. If it's only there for a short amount of time and then it's used then stored it at room temperature.

i want an apology from everyone on your other video arguing with me tryna say uncut tomatoes are legally required to be stored in the fridge. youve cleared it up exactly, there is no legal requirement, and room temperature is better for quality.
