Also, I'm going again soon so send me your best campfire recipes🏕️🔥 Campfire fries: Wash your potatoes and slice into 1/4-1/3" slices as evenly as possible. (It helps if you cut a small flat spot then start) Preheat about an inch or so of your desired fat (mine was a mix of cooking olive oil, bacon grease, ghee, and rendered beef fat) in your cast iron skillet or Dutch oven til it reaches around 300-350F. Drop your fries in a single laver covering the bottom. Resist the urge to stir them until they start to brown. Once they begin browning, turn as needed until desired crispness. I look for a golden brown, and prefer a crispier fry. Remove and place on a paper towel or in a strainer basket. Repeat as needed until you have as many fries as you want. Cooking for all of us took 5 or 6 batches so I started before the steak. For the steak I saved some money by getting a standing rib roast, then slicing it into ribeye myself. I finished with a garlic herb butter and some fresh cracked black pepper!
