Blueberry streusel muffins ✨🫐 Ingredients 2 1/3 cup all-purpose flour (310g) 3/4 cup granulated sugar (155g) 2/3 cup whole milk (166g) 1/2 cup butter, melted (113g) 2 large eggs 2 tsp baking powder 1 tsp vanilla extract 1/2 tsp salt 3/4 cup blueberries Crumble 1/2 cup flour (110g) 1/4 cup sugar (50g) 3 tbsp brown sugar 4 tbsp butter, melted Instructions - Preheat oven to 425F (200C) - In a small bowl, combine the flour, sugar, and a pinch of salt. - Add the melted butter cubes and use a spoon work the butter into the dry ingredients until the mixture forms coarse crumbs. - In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt. - In another large bowl, add butter, milk, sugar, vanilla extract until well combined. - Gradually add the dry ingredients to the wet ingredients, stirring gently to combine. Do not overmix. - Gently fold in blueberries until combined - Line a muffin tray with parchment paper and add muffin batter to each cup filling 2/3 full. Add crumble on top of each muffin. - Bake in the preheated oven at 425 for 12-15 minutes minutes lower the over to 350 and cook for an additional 10 minutes or until toothpick inserted into the center comes out clean, with a few moist crumbs. - Allow muffins in the tin for a few minutes before transferring them to a wire rack.
