Chickpea and Grilled Corn Salsa with Lime 🌽🍋 Nutrition Facts: Approximately 120 calories per 1/2 cup serving, 4g protein, 22g carbohydrates, 3g fiber, 4g fat Ingredients: 2 cups cooked chickpeas (or 1 can, drained and rinsed) 2 ears fresh corn, husks removed 1 medium red bell pepper, finely diced 1/2 cup red onion, finely diced 1/4 cup fresh cilantro, chopped 2 tablespoons olive oil 3 tablespoons fresh lime juice (about 2 limes) 1/2 teaspoon ground cumin 1/4 teaspoon chili powder Salt and black pepper to taste Instructions: 1. Preheat grill or grill pan to medium-high heat. Brush corn with 1 tablespoon of olive oil and place on the grill. 2. Grill corn for 10-12 minutes, turning occasionally, until kernels are slightly charred and tender. Remove from heat and let cool. 3. Once corn is cool enough to handle, carefully cut the kernels off the cob using a sharp knife. 4. In a large mixing bowl, combine the grilled corn kernels, chickpeas, diced red bell pepper, red onion, and chopped cilantro. 5. In a small bowl, whisk together the remaining 1 tablespoon olive oil, fresh lime juice, ground cumin, chili powder, salt, and black pepper. 6.
