How to Make Beef Bolognese (and My Go-To Wine Pairing) 🍝🍷 This slow-simmered Bolognese is one of my favorite meals to make for special occasions at home. Rich, hearty, and packed with flavor — and the perfect pairing is always a bold red wine. What’s your go-to wine with pasta? Ingredients •2 lbs ground beef •4 oz pancetta, diced •5 tbsp unsalted butter (2 for sear, 3 for pasta) •1 onion, 3 carrots, 2 celery stalks, chopped (soffritto) •2–3 garlic cloves, minced •1 ½ cups dry red wine •⅔ cup tomato paste •14 oz crushed tomatoes •3 cups chicken stock •2 cups whole milk •1 cup heavy cream •3 bay leaves, ¼ tsp nutmeg, ½ tsp garlic powder, ½ tsp salt, ¼ tsp pepper •1 cup parmesan + rind (more to serve) •1 lb pappardelle •Fresh basil (thyme/rosemary optional) •Optional: ½ tsp balsamic or red wine vinegar Instructions 1. Pulse onion, carrot & celery into a fine chop. 2. Brown beef in 2 tbsp butter, season, remove. 3. Cook pancetta until crisp, add garlic + soffritto, sauté until soft. 4. Return beef, deglaze with wine, simmer until mostly evaporated. 5. Stir in tomato paste, nutmeg, bay leaves. Cook 5 min, add tomatoes. 6. Add stock, milk, cream, rind & herbs. Simmer low 1–2 hrs, stirring. 7. Finish with parmesan + splash vinegar. Adjust seasoning. 8. Cook pasta al dente, toss with 3 tbsp butter. 9.
