20-MINUTE MONGOLIAN BEEF GLASS NOODLES 🍜 As you know, lately I am obsessed with Korean style glass noodles! They are naturally gluten-free and unlike rice noodles which get clumpy after a few minutes, these noodles retain their shape and texture and soak up the sauce. I’m pairing the noodles with a healthier version of Mongolian Beef and omgeeee, this meal is a MUST for any night of the week! Comment NOODLES and I will DM you the link to buy the special glass noodles! Makes 4 servings 1 lb. ground beef (I use 90/10 to keep it lean) 4 cloves garlic, mashed 1/4 cup coconut sugar (or brown sugar) 1/4 cup beef broth 1/4 cup low sodium soy sauce (or coconut aminos) 1/4 cup hoisin sauce 1 tsp ground ginger 1/2 tsp ground black pepper 1/4 tsp red pepper flakes 10 oz linguine 1 tb arrowroot or cornstarch 2 tb water Noodles: 3, 3.5-oz packages of korean style glass noodles Garnish: Chopped green onion Sesame seeds In a large skillet over medium-high heat, brown the ground beef until it’s no longer pink. Add the mashed garlic and stir for another minute. Then add in the soy sauce, broth, coconut sugar, hoisin sauce, ginger, black pepper, and red pepper flakes. Stir well to combine. Next, in a small bowl whisk together the arrowroot/corn starch with the water. Stir this mixture into the skillet with the beef. Bring to a gentle simmer, until the sauce thickens to your liking. Remove from the heat. Finally, make your noodles. In a large pot, cook noodles according to package directions, stirring frequently, so the noodles don’t clump together. Drain and rinse under cold water and set aside. Add the noodles to the pan with the beef. Toss well and enjoy. SHEET PAN FISH TACOS WITH CREMY HIGH PROTEIN AVOCADO SAUCE, for an easy and very delicious dinner—why wait for taco tuesday to make them, tonight is the night 🌮. I love cooking the fish on a sheet pan for less mess—there’s no splattering anywhere and the fish cooks evenly. You’ll see! Double up the protein and you can make fish tacos twice in a week. Makes 4 servings Ingredients 1 1/2 pounds tilapia or mahi mahi (I like the frozen from @wholefoods) 2 tb olive oil (@latourangelle) 2 tsp cumin 1 tsp paprika 1 tb chili powder 2 tsp onion powder 1 tsp salt 1 tsp ground black pepper 8 taco size tortillas of choice (@missionfoodsus) Slaw 1 cup green cabbage, shredded 1 cup red cabbage, shredded 1/2 cup cilantro, chopped 1 tb olive oil 1 lime Avocado Sauce 2 small avocados (or 1 large) 3/4 cup cottage cheese (@good_culture) 3 tb avocado oil 1 lime 1/2 cup parsley 1 tsp cumin Seasonings are @simplyorganicfoods 🫶🏻 Preheat oven to 425F. Line a baking sheet with parchment paper or foil if your pan is not non-stick. Add the fish to the pan in a single layer and rub with oil and seasonings. Bake for 12-14 minutes until fish is cooked through. Remove from oven and shred with forks and set aside. Next, make the avocado sauce. Add all ingredients to a blender and blend until smooth. Taste and adjust seasonings as needed and set aside. Finally, make the slaw and assemble tacos, spreading the avocado sauce on the tortilla, followed by the fish and slaw, with more avocado sauce on top. Enjoy! #fishtacos #sheetpanmeals #sheetpantacos
