Tune in to the NASCAR on NBC Daytona race tonight at 7:30 pm ET!!! @Peacock @NBC Sports @NASCARonNBC #Peacock #PeacockPartner Ingredients: -Whipped ricotta: ricotta, olive oil, salt -Blistered tomatoes: cherry tomatoes, crushed garlic cloves, olive oil, salt, fresh thyme and rosemary -Baguette (sliced) -Yellow peaches (thinly sliced) -Fresh basil and mint -red chili flakes -lemon zest -hot honey Recipe: -drizzle bread slices with olive oil and broil (500F) for 5-10 min until golden brown. Remove and set aside -in a small saucepan add tomatoes, garlic, few tbsp of olive oil, pinch of salt, thyme and rosemary sprig. Simmer on low-med until the garlic is golden brown and the tomatoes are blistered and soft, stir occasionally (15ish min). remove herbs and set aside -whip together ricotta, 1/2tbsp olive oil, and a pinch of salt until smooth. You can use an electric whisk, blender, or food processor. add to a piping bag (or ziploc bag and cut off the end) TOMATO RICOTTA: to the bread add whipped ricotta, tomatoes, garlic, fresh basil and chili flakes PEACH RICOTTA: to the bread add whipped ricotta, sliced peach, mint, hot honey and lemon zest enjoy!! :)
