Why, just why? I ate at a LJS about 30 years ago. 1st time eating at one. Got my fish order and took a bite. Delicious, crunchy exterior followed by oozing liquid out of the delicious crunchy exterior. Damn near threw up and I deposited it in the garbage can and wondered why people liked their LJS oozing fish filets and haven't been back to one since.
