@blackskullsreaper: A few recipes that my Mom has hung onto through the years utilizing ground beef, zucchini, tuna, rice (or quinoa) dating back to the late ‘70s. Handwritten note from recipes: Zucchini bake: Green chilies optional. Quinoa can be used in place of white rice. Reduce mozzarella cheese to 1 cup if freezing the dish. After sautéing the beef/veggies, drain off grease. Texas hash: Can be doubled, can put in freezer. Cook in big skillet pan on top of stove with lid for 25 minutes.
