We took the kids to the orchard and it is always a staple for us to get a bag of mini donuts. They couldn’t stop talking about them, so we decided to make some at home! Below for the recipe (donut maker not required). Apple Cider Mini Donuts Donut batter: 1 3/4 C all-purpose flour 1 tsp baking powder ¾ tsp salt 1 tsp ground cinnamon ½ tsp ground nutmeg 1/2 C unsalted butter, room temperature 1/2 C light brown sugar 1/4 C sugar 2 large eggs, room temperature 1 tsp vanilla extract ½ C apple cider Coating: 1/2 C butter, melted 1/2 C sugar 1 tsp cinnamon If not using a mini donuts maker, preheat oven to 350°F and grease 2 mini doughnut pans. In a medium bowl, whisk together flour, baking powder, salt, cinnamon and nutmeg. Set aside. In a large bowl, combine 10 Tbsp, brown sugar and granulated sugar. Add the eggs, apple cider, and vanilla. Mix until well incorporated. Mix in the flour mixture a bit at a time until well combined. Follow donut maker directions or fill pans (using a piping bag or ziploc bag to pipe is easiest). Bake 12-14 minutes until golden brown and a toothpick inserted comes out clean. In a small bowl, whisk together remaining sugar and cinnamon. In a separate small bowl, melt the remaining butter in the microwave. After donuts cool for a couple minutes, dip both sides in melted butter and then coat in cinnamon sugar mixture. Enjoy warm or cooled! #minidonuts #appleciderdonuts #fallrecipes
