Fair if there is a fan, all other fridges can struggle. But the point of cooling it down fast stands. Dubble plate is to disapate the heat better

Ex food industry guy here. What would you say is more important: cooling the food quickly or keeping it covered? I personally vote for the latter. Especially if it's a large portion, I always cover and let cool (not go cold!) before it goes to the fridge.
