For any curious, this is actually a Chinese dish called “蒸水蛋” or “Zheng Shui Dan”, it’s eggs steamed with water or a mild broth to make a custard like egg that’s often served with green onions, sesame oil, and soy sauce on top! It’s often mistaken for Japanese, when it was brought to Japan by China in the 17th century :)
