@mckuala: Mediterranean Salmon with Olive Relish & Garlicky Greens. Husband is not an olive fan but even he approves. This was soooo good ✨ Ingredients Salmon • 2 salmon fillets • 2 tbsp olive oil • 2 cloves garlic, minced • Zest + juice of 1 lemon (reserve juice for relish) • 1 tsp smoked paprika • ½ tsp cumin • Salt + pepper • 1 tsp honey (for finishing) Relish • ⅓ cup Kalamata olives, chopped • ¼ cup parsley, chopped • 2 tbsp olive oil • 1 tbsp balsamic vinegar or lemon juice • ⅓ cup feta, crumbled Greens • 1 bunch spinach • 1 shallot, thinly sliced • 2 cloves garlic, minced • Pinch of chili flakes • 1 tbsp olive oil • Splash of white wine or balsamic vinegar • 2 tbsp toasted pine nuts - optional Optional Sauce • 2 tbsp tahini • 2 tbsp coconut yogurt • Juice of ½ lemon • 1 clove garlic, grated • Water to thin Instructions 1. Marinate salmon: In a bowl, whisk olive oil, garlic, lemon zest, smoked paprika, cumin, salt, and pepper. Rub onto salmon fillets. Marinate 30 min if possible. 2. Bake salmon: Place salmon on a lined baking sheet. Bake or air fry at 400°F for 12–15 min until just cooked through. Drizzle with honey before serving. 4. Make relish: Mix olives, parsley, olive oil, vinegar/lemon juice, and feta. Toss gently. 5. Cook greens: Heat olive oil in a skillet. Sauté shallot until softened. Add garlic and chili flakes. Add greens and cook until just wilted. Deglaze with a splash of wine or vinegar. Finish with toasted nuts. 6. Optional sauce: Whisk tahini, yogurt, lemon juice, and garlic. Thin with water until drizzly. 7. Plate: Place salmon on plates. Spoon relish on top. Serve greens on the side with nuts. Drizzle with tahini sauce if using.
