pesto chicken pasta bake 🤤 Ingredients (serves 4): 3-4 chicken breasts, chopped 1 tsp smoked paprika 1 tsp garlic powder Pinch of salt and pepper 3 garlic cloves, diced 1 white onion, diced 1 red pepper, diced 1 yellow pepper, diced 100g red pesto 200g low fat soft cheese 320g dry weight pasta + 2 large spoonfuls pasta water Grated cheddar Grated mozzarella Firstly, chop up all your veggies and chicken. Then season your chicken in the smoked paprika, garlic powder, salt and pepper. Fry off your chicken in a large pan until sealed. Then add your garlic, onion and pepper and cook until softened. Pop your pasta onto boil as per instructions and turn your oven to 180 degrees C. Add your red pesto to the pan, give a good stir, then add your soft cheese and mix until combined. Then add a few spoonfuls of pasta water, let simmer until a sauce forms. Add your pasta and mix well. Divide your pasta into glass, oven safe containers (or just one big dish), then add your cheeses and bake in the oven for 25 mins until the cheese has melted and is golden. #pestopastabake #mealprepideas #mealprep #chickenpestopasta #highproteinmeals
