Simple, rustic, and perfect with coffee or tea — they’ll become your new favourite homemade snack. Ingredients (makes about 20 biscuits): • 300g oats • 125g sugar • 125g butter (melted) • 50g almonds • 1 egg + 1 yolk • 1 tsp cinnamon • Zest of 1 lemon • 8g baking powder Instructions: Add half the oats and all the almonds to a blender and grind into a fine dust. Mix with the melted butter until combined. Transfer to a bowl and add all remaining ingredients. Mix by hand until smooth. Let the dough rest in the fridge for 30 minutes. Shape into small balls, press gently into biscuit shapes, and place on a tray. Bake at 160°C for 15–20 minutes (or longer depending on your oven). Cool before serving and enjoy!
