60 Day Fermented Honey Garlic Tomahawk Steak This cook was a long time in the making. I started by fermenting honey garlic, covering a mountain of garlic cloves with honey. I thought it would take 30 days, but it ended up going almost 60. Although I didn’t show it in the video, I dry brined the tomahawk steak overnight, then soaked it in the fermented honey garlic for three days. When I pulled it out, the color had deepened to a beautiful mahogany and the aroma was pure fermented honey garlic. For the cook, I set the steak on the grill over indirect heat until it hit 115°F internal, then seared it off. The honey caramelized quickly, so I flipped it often to keep it from burning too much. To balance the sweetness, I made a sauce with confit garlic and its oil, a spoonful of the fermented honey, a splash of dark soy, and plenty of ground black pepper. On the side, I made pomme purée dressed up with the confit garlic. The result was definitely unique, but I didn’t feel like I was eating a proper steak. Was it worth the long process? Absolutely not. The same dish without soaking the steak would be infinitely better, since the meaty notes of the beef would pair beautifully with the fermented honey garlic sauce without being overpowered.
