Chimichurri Steak Quesadilla 🥩🌿 Full written recipe⬇️ Start out by making a Chimichurri with: -1/2 cup of finely chopped Italian parsley  -1/2 cup of finely chopped cilantro  -1 tablespoon of dry oregano  -1/3 cup of extra virgin olive oil  -2 tablespoons of fresh squeezed lime juice -1 clove of minced garlic  -red pepper flakes -salt and pepper to taste  Then mix it all together and let it sit in the fridge for at least 5 hours, but overnight is best. (Just to note, this is not my traditional Chimichurri recipe. I developed this recipe specifically for the quesadilla!)  Then get some Churrasco (also known as Skirt Steak, I used 1.3 lbs) and add some olive oil and seasoning to it.   I used: -Adobo  -Sazon -Chipotle seasoning  Then throw it on the grill and cook it to your liking. (You can also sear it on the stove top if you don’t have a grill.) Once the steak rests for 5 to 10 minutes, cut it into bite-sized cubes. Toss it in a bowl with the Chimichurri until it’s completely coated.  Then heat up a pan on medium heat with a little bit of oil.  Add on a burrito sized tortilla, a layer of cheese, the steak, another layer of cheese, and another tortilla.  I used half Oaxaca Cheese and half Mozzarella, but you can use just use one or the other if you want.  Each quesadilla requires 1.5 to 2 cups of shredded cheese.  Cook both sides until golden brown and cut into triangles when it’s done.  I like serving this with a side of sour cream and hot sauce.
