Marinate the Pork Spare Ribs with the chopped Green Onion (white part only), 3 Tbsp Garlic, 1โ„2 tsp Black Pepper, and 3 Tbsp Fish sauce. Mix well. Cover with plastic wrap and let it marinate for at least 1 hour in the fridge or overnight for best results. 2. In a wok, add 2 Tbsp Neutral oil and sprinkle 2 Tbsp Sugar evenly on the oil. Let it caramelize to a brown color.  3. Carefully add in the Pork and mix it well. Let it cook for 3-4 minutes until no longer pink.  4. Pour in 1 can Coco Rico add 1 Tbsp Fish Sauce. Reduce the heat down to medium low. Skim off any impurities. Let it simmer for 35 with the lid on. Occasionally remove the lid to continue skimming impurities and stir the mix to ensure even coating. Taste sauce and adjust to preference. 5. After 35 minutes remove lid. Turn the heat back up to high and cook for about 3-5 minutes to reduce and thicken the sauce. Turn off the stove once the sauce has thickened to your desired liking.
