ABUNDANT BOWLS S2 EP. 1 - SOUL FOOD BOWL INGREDIENTS For Greens 2 bunches collard greens 2 veg stock cubes 2 cups water 5 tbs avocado oil For Yams 2 sweet potatoes Simple syrup (3/4 cup maple syrup + 1/4 water) Pinch of cinnamon + nutmeg 6 knobs of butter For Stewed Red Beans 1/3 each of chopped onion and pepper 1 can organic red beans 2 veg stock cubes 1/4 cup water For Mac and Cheese Elbow pasta 3 cloves of minced garlic 
1/2 onion, chopped 
1 can of full fat coconut milk 
1/2 cup of raw cashews 
1 & 1/3 cups of unsweetened plant milk 
½ cup of Nutritional yeast 
Salt & pepper to taste 
1 tsp turmeric
1 tbs vegan butter For Fried Mushrooms 1 large oyster mushroom cluster Wet batter
6 tbs ground flax seed
2/3 cup water
1 tbs mustard
1/4 cup hot sauce

Dry batter
1 1/2 cup chickpea flour
1 tsp salt
1 tsp pepper
1 tsp paprika
1 tsp garlic powder
1 tsp smoked paprika
1 tsp cayenne pepper
1 tsp onion powder
1 tsp mustard powder 
1 tsp dried thyme INSTRUCTIONS Braise chopped and washed  collard greens with water and veg cubes for about 30 minutes. Peel + chop sweet potatoes into thick medallions, lay in a baking dish, combine simple syrup in a cup and pour over potatoes with knobs of butter. Bake at 450ºF for 30-40 mins or until soft. For beans swear pepper and onion, then add bean with liquid and simmer with stock cubes for about 15 minutes.  For mac + cheese, blend cashew roux, chop and sweet garlic and onion in a pan pout over roux with coconut milk, vegan butter, nutritional yeast, and a touch of turmeric. For Mushrooms, prep batter and dredge mushrooms in each twice then fry in avocado oil for about 3-5 mins on each side or until golden and crispy.
