I’m sharing my recipe so you can enjoy these delicious treats — full details in the caption! Dough Ingredients 	•	560 g bread flour 	•	125 g active sourdough starter 	•	300 ml milk 	•	1 egg + 1 egg yolk 	•	60 g honey 	•	1 tbsp vanilla extract 	•	12 g salt 	•	95 g unsalted butter (softened) 	•	~2 cups neutral oil for frying (canola, vegetable, etc.) ⸻ Cinnamon Sugar Coating 	• 1 cup  granulated sugar 	•	1–2 tsp ground cinnamon (adjust to taste) 	•	Optional: pinch of salt (Mix together in a bowl or shallow dish) ⸻ Instructions 1. Make the Dough 	•	Feed your sourdough starter in the morning. 	•	Around midday, combine all dough ingredients except for the butter in a stand mixer bowl. 	•	Mix until combined and let rest for 20 minutes. 	•	Add the butter in small pieces, incorporating each one fully before adding the next. 	•	Transfer the dough to a greased bowl. Cover and bulk ferment at room temperature for 6–8 hours, doing 4 sets of stretch & folds during the first 2 hours (every 30 minutes). 	•	Refrigerate overnight (8–12 hours). 2. Shape the Donut Holes 	•	In the morning, take the dough out and let rest at room temp for 10 minutes. 	•	Divide the dough into small portions (25gr  each) and shape into tight balls. 	•	Place them on parchment paper dusted with flour. 	•	Cover and let proof for 2.5–4 hours, or until puffed and jiggly. 3. Frying 	•	Heat oil in a deep pot to 350–360°F (175–180°C). 	•	Fry the donut holes in batches for 1–1.5 minutes per side, turning as needed until golden brown. 	•	Transfer to a paper towel-lined tray. 4. Cinnamon Sugar Coating 	•	While still warm, roll the donut holes butter and then in the cinnamon sugar mixture to coat well. 	•	Let cool slightly and enjoy! — Chocolate Ganache — 	•	100 g chocolate (semi-sweet or to your preference, chopped) 	•	80 g heavy cream 	•	15 g unsalted butter ⸻ Instructions: 	1.	Heat the heavy cream until it’s just about to boil (don’t let it fully boil). 	2.	Pour the hot cream over the chopped chocolate and let it sit for 1–2 minutes to melt the chocolate. 	3.
