🥭 Mango coconut jellies 🥥 Saw this fun recipe on taste.com and made it for the kids, they absolutely loved them so thought your family might too! Ingredients: COCONUT LAYER * 270ml coconut milk * 1 tsp vanilla extract * 1½ tbsp gelatine powder * 1/4 cup cold water * 2 tbsp honey (omit honey for babies under 12 months) MANGO LAYER * 1 ½ cups frozen mango * ¾ cup boiling water * 1/4 cup gelatine powder * 120ml cold water Method: 1. For the coconut layer, add the coconut milk and vanilla extract to a saucepan over a medium heat and stir to combine. 2. While the coconut milk is heating, add the gelatine and the cold water to a small bowl and stir for 30 seconds until it blooms. Add the gelatine mixture to the coconut mixture and stir until the gelatine has melted. Set aside to cool for a few minutes, then stir in the honey. 3. Fill your lined brownie tin with the coconut mixture. Place in the fridge (on a flat surface) for 20-30 minutes to set. 4. For the mango layer, using a blender, blend the mango and boiling water until smooth. 5. Rinse the saucepan and return to medium heat. Add the mango mixture and heat, stirring often. 6. Repeat the gelatine method in step 2, using the gelatine and cold water for the mango layer. Add the gelatine mixture to the mango mixture, stirring until well combined and the gelatine has melted.  7. Once the coconut layer is set, pour the mango mixture on top. Refrigerate for 3 hours or until completely set. Carefully remove jelly from the brownie tin and cut into small cubes. Place in an airtight container and refrigerate for up to a week.
