Replying to @Brook Marbled Chocolate Zebra bread recipe 🖤🤍 Ingredients Dough 250g bread flour 30g sugar 3g salt 4g instant yeast  1 egg 60g warm water 60g warm milk 30g unsalted butter (room temp) Chocolate paste  15g bread flour 30g sugar 10g cocoa powder 5g corn starch 60g milk 70g semi-sweet chocolate chips  1 egg white 15g unsalted butter Dough: Mix together liquid ingredients - water, milk, egg - and set aside. Mix together dry ingredients - flour, sugar, salt - and place in bowl of stand mixer with hook attachment. Mix on low for a few seconds, then add yeast. Slowly stream in the wet ingredients, then increase the speed to medium and mix for 10 minutes. After 10 minutes, add butter, and mix for another 10 minutes. To check if the dough is ready, try the windowpane test. Place the dough in a greased bowl covered, and let rise for one hour or until doubled in size. Chocolate paste: Mix flour, sugar, cocoa powder, cornstarch, and milk in heatproof bowl. Microwave for 30 seconds, mix, then repeat until mixture has thickened. Add semi sweet chocolate it’s got, and butter, and let sit for 2-3 min to melt. Mix until smooth, then microwave for another 30 seconds. Add butter and mix until smooth. Keep microwaving for 30 seconds intervals until mixture is a thick paste. Shape paste into a square and fold in plastic wrap, refrigerate until firm.  Shaping: Punch down bread dough, and roll into rectangle. Place chocolate block in the middle, and fold dough like an envelope so all the chocolate is enclosed in the dough, pinch the sides shut. Roll out the dough so the chocolate spreads inside, then fold in thirds and let rest for 10-15 minutes. Roll out the dough again, then begin to roll the dough into a log (like you would a cinnamon roll). Pinch the ends into the roll, then cut the roll down the middle and twist the two strands together. Place inside Pullman loaf and let rise for 1 hr until the dough is almost at the top of the pan. Brush the top of the dough with egg white or milk before baking.  Bake for 45 minutes at 350 F or until internal temp of bread reaches 190 F. Take the bread out of the pan immediately and let cool before slicing.
