This burger is topped off with one of my new favorite bacon jam recipes…. Hot Honey Bacon Jam!  So good, easy to make, and a definite must try!  Ingredients: • 1 lb bacon, diced • 1 white onion, diced • 4-6 oz black coffee or espresso • 2 tbsp apple cider vinegar • 1/4 cup Brown sugar @Lakanto  • 1.5 - 2 tbsp hot honey - @Savannah Bee Company  • 1 pint fresh raspberries • salt & pepper • Brioche Buns   • 75/25 ground beef @Snake River Farms  • Steak Seasoning • havarti cheese • Hot Honey Goat Cheese - @Mike’s Hot Honey @Montchevre  • arugula 1. Start by dicing up some bacon and getting that in a heavy bottom pan over medium hi heat. Let this cook down and stir continuously to get an even cook. Once cooked through and crispy, after 10-15 mins, pull the bacon out and remove all but 2-3 tbsp of bacon grease.  2. Add the diced white onion and sauté for 5 mins before adding the black coffee and stirring that in. Then add the acv, brown sugar, hot honey, and fresh raspberries and stir to combine. Let this simmer on medium low until the raspberries break down, then add the bacon back in and season with salt and pepper. Simmer for 40 minutes or until thickened and set aside.  3. Form the beef into 4 oz balls then smash them into the preheated griddle. Season with your seasoning of choice, then after about 90 seconds, flip and top with havarti cheese.  After that melts, remove and put the burger together.  4. Spread the hot honey goat cheese on the bottom bun, then place down arugula, 2 Pattie’s, the bacon jam, and the top bun covered in more goat cheese!  Enjoy!
