So, shall we cool down with a bowl of Makguksu? 🥢 Korean Cold Noodles with Perilla Oil (Makguksu) – 1 serving 🔖 Ingredients: 1 small bundle of buckwheat noodles (soba) Cilantro leaves (Optional) Cucumber, julienned Gim (김) or nori (sushi-type seaweed), cut or crumbled 🫙 For the sauce (Yangnyeomjang, 양념장): 1 tbsp perilla oil or sesame oil → If using raw perilla oil, you can enjoy the omega-3 benefits. But since it’s not easy to find in Spain, I recommend toasted sesame oil instead. 2 tbsp soy sauce 2 tbsp water 1 tsp sugar or 1 tbsp maple syrup 1 tsp fish sauce Chopped cilantro stems (Optional) 1 soft-boiled egg (7 minutes) 💁🏻‍♀️ Step-by-step: 1️⃣ Prep: In a bowl, mix all the sauce ingredients. Separate the cilantro leaves. Boil the soba noodles for 4 minutes. Rinse well in very cold water with ice to remove the starch. Drain in a colander for 5 minutes so they keep a good texture. Meanwhile, cut or tear the nori into small pieces. 2️⃣ Assemble: Add the noodles to the bowl with the sauce. Mix everything with your hands so the noodles are well coated.
