Here's some additional information if you're interested in learning more!: - Tenkaippin's signature "kotteri" wasn't an accident. Founder Kimura Tsutomu spent three years and nine months refining a chicken-and-vegetable emulsion before opening the first shop in Kyoto in 1981. The company says its factories use roughly 16,000 kg of chicken bones per day to build that texture, then layer in vegetables for depth-an industrial process applied to a fiercely personal recipe. - As you finish a kotteri bowl, you will uncover the following statement printed on the bottom of the bowl:「明日もお待ちしてます。」 "We’ll be waiting for you tomorrow." It's printed so it only appears as the soup thins, and the slogan now anchors branded projects and limited bowls the company rolls out.
