Promise. 🔸LAZY GIRL PULAO: easy rice cooker recipe🔸 RICE: 3 cups kalijeera rice 1/2 c oil 1 bay leaf 2 cinnamon sticks 3 cardamom pods 1 cup thinly sliced onions 1 tbsp ginger paste 1.5 tsp salt (adjust) 2 tbsp ghee 3 green chilies 👉🏽 Soak kalijeera rice for 30 mins, then wash and drain. 👉🏽 Meanwhile, heat oil in a pan and add the whole spices (bay leaf, cinnamon, cardamom). Sauté for a minute. 👉🏽 Add the onions and sauté until they get soft and start to turn slightly golden. 👉🏽 Add ginger paste and sauté for a few more minutes. Remove from heat. 👉🏽 Add drained rice to rice cooker, and then pour in 6 cups water. Then add the masala you just cooked, plus salt and ghee. Taste the water for salt and adjust if necessary (the water should taste salty, like seawater). 👉🏽 Set the rice cooker to cook. About 15 minutes in, give everything a good stir and throw in the green chilies. BERESTA (fried onion topping): 3 tbsp oil 1 tbsp ghee 1.5 cups thinly sliced onions 👉🏽 Meanwhile, in the same pan you cooked the masala in, heat oil and ghee. Sauté the onions on medium heat, this time until golden brown and slightly crispy. Be patient…turning up the heat will cause your fried onions to burn! FINISHING: 👉🏽 When the rice is done cooking, let it sit uncovered for 5 minutes first. Then add half the beresta to incorporate into the rice, saving the rest for garnish. 👉🏽 Use a spatula to very gently fluff up the rice. Focus on fluffing up the top layer only; if you try to fluff up the bottom parts, you’ll turn it into mush. If you’re transferring the rice to another platter, you can fluff up the bottom layer after you’ve already transferred out the top layer. 👉🏽 Garnish with the reserved beresta.
