🏴󠁧󠁢󠁳󠁣󠁴󠁿 TABLET SKILLET COOKIE 🏴󠁧󠁢󠁳󠁣󠁴󠁿 Tablet series Episode 6 We love a cookie in our house and this giant skillet cookie is the best family dessert! Once cooked leave for 5 minutes, plonk it in the middle of the table then all get stuck in - the cookie is warm and soft and packed with flavour- the crumbly tablet and dark chocolate crowning it with Scottish glory - give it a try!  Makes 1 x 12” skillet cookie 150g plain flour 50g oat flour (rolled oats blitzed to flour form) Half tsp baking powder 1 tbsp cornflour (corn starch) 130g unsalted butter 200g brown sugar 1 whole egg 1 egg yolk 1 tsp vanilla paste/extract 1 tbsp white miso 160g chopped tablet Good quality dark chocolate to decorate Flaky salt to sprinkle Melt butter and take to nutty brown stage, stir in the brown sugar and miso till thoroughly mixed, then pour into your mixing bowl to cool down.  Mix your plain flour, oat flour cornflour and baking powder in a bowl. Then mix your egg and egg yolk together with a vanilla paste or vanilla extract then pour that into your mixing bowl and combine with the butter and sugar mixture. Then stir in the flour mixture and thoroughly combine. Sprinkle in 2/3 of your chopped tablet and mix together then tip it into your well buttered skillet, gently pressing it out till it fills the bottom. Break pieces of your dark chocolate and press into the surface at regular intervals then sprinkle your remaining tablet over the top. Press gently into the surface of the cookie with a spatula and sprinkle with flaky salt. Pop into the fan oven at 180c for 20 to 22 minutes then remove from the oven and leave aside for five minutes before serving. Pop it in the middle of the table and let everyone help themselves and if you want to double up serve with tablet ice cream! Absolutely  delicious!
