Strawberry Matcha Cookies 🍪🍓🍃 When I make cookies, I always brown the butter for that nutty, fragrant aroma. 🧈 Also, using brown sugar adds extra depth to the flavor, making each bite richer and more satisfying. I paired these matcha cookies with a strawberry frosting and it goes soooo well! Please try it out 🍓 Ingredients: Matcha cookies: - 200g all-purpose flour - 10-15g matcha powder - 1/2 tsp baking powder - 1/2 tsp baking soda - 1/2 tsp salt - 1 large egg - 100g white sugar - 50g brown sugar - 120g butter Strawberry frosting: - 50g dried strawberry powder - 250g mascarpone or cream cheese - 250g whipped cream - 50g sugar - 1 tsp vanilla extract Optional: extra dried strawberry powder for dusting, fresh strawberries Instructions: 1. Whisk together the flour, matcha, baking powder, baking soda and salt. Set aside. (You don’t need high quality matcha for these, culinary-grade is totally fine) 2. Melt the butter over medium heat until golden brown, stirring occasionally. Let it cool for 10–15 minutes. 3. Mix the cooled butter with white sugar, brown sugar and egg until smooth. 4. Sift in the dry ingredients and fold gently until just combined. 5. Cover with plastic wrap and chill for 30 minutes to 1 hour. 6. Preheat the oven to 175°C. 7. Scoop 1.5 tbsp of dough onto a lined baking sheet and bake for 12 minutes. Let cool. 8. Whip together the mascarpone or cream cheese, whipped cream, sugar, vanilla and dried strawberry powder until stiff peaks form. 9. Pipe the frosting onto the cooled matcha cookies. 10. Optional: dust with extra strawberry powder and top with fresh strawberries. Enjoy! #matcha #matchacookies #strawberrymatcha #baking
