Cream softened butter and 1 1/2 cups sugar in a large bowl   2. Add room temperature eggs one at a time and mix. 3. In a separate bowl, combine flour, cream of tartar, baking soda and salt in a separate bowl. 4. Blend dry ingredients into butter mixture. *Chill dough in refrigerator for an hour or overnight.* Before baking, Preheat oven to 350°F 5. For best results, chill the cookie sheet in freezer for 10-15 minutes before using it.  6. Meanwhile, mix 3 tablespoons sugar, and 3 teaspoons cinnamon in a small bowl. 7. Scoop 1 inch balls of dough into the sugar/ cinnamon mixture. 8. Coat by gently rolling balls of dough in the sugar mixture. 9. Place rolled dough onto a chilled, ungreased cookie sheet.  10. Lightly flatten balls into discs *they'll be  the size of silver dollars so they'll be thick, not flat* with the bottom of a drinking glass (I use a mason jar) 11. Do not crowd pan. I usually do 3 cookies per row, bake 8-10 minutes. My oven is 9 minutes for the perfect cookie.  12. Remove from pan immediately and place on a cooling rack Makes about 30 cookies, you will need to make them in batches. After I remove the cookies and placing on a cooling rack, I return the cookie sheet to the freezer while I roll out the next set.
