PAELLA STUFFED SILVER BEET ROLLS Throwing back to this one from last year. A blend of tradition and creativity to try. Perfect comfort food dinner, so simple and so good.  Save the recipe below and let me know in the comments you’re going to make it🙌 Ingredients: Makes 12 large rolls For the Rolls: 1 whole silver beet 1 1/2 cup tomato sauce 1/2 cup shedded cheese For the Paella: 1 tablespoon olive oil small brown onion, finely shopped small red pepper, finely chopped en 1 cup mushroom cups, chopped 1 small broccoli head, cut into florets and chopped 1 teaspoon smoked paprika  1 teaspoon oregano 1/2 teaspoon garlic powder (optional) 1 teaspoon saffron powder (see notes below) 1 cup bomba rice or arborio rice 1 cup frozen green peas  2 cups water or vegetable stock Method: In a large pan heat olive oil over medium heat. Add onions and cook for 3-5 minutes. Add peppers, mushrooms, broccoli and spices. Give it a toss and cook for another 5 to 7 minutes. Add rice and stir everything together, cook for another minute. Add in frozen peas and water/vegetable stock. Gently stir and bring to a boil. Once boiling, reduce the heat to a low and cover the pan. Simmer for 20 minutes undisturbed. Give the rice a taste after 20 minutes, if it’s tender, switch the heat off. Bring a large pot of water to a boil. Trim the white base of the silver beet and tear out 12 leaves. Place the leaves in the boiling water for 7 minutes or until they have wilted. Drain the leaves and let them cool down. Lay out the leaves on a working surface and spoon tablespoons of the paella onto the base of each leaf. Roll them tightly, tucking in the sides to enclose the filling and place into a greased baking dish. Pour over tomato sauce and sprinkle with cheese. Pop in the oven at 180C for 15-20 minutes or until the cheese has melted and the top is crispy brown.
