Boil the chicken in 2 large bowls of water along with ginger paste, oil, and salt until cooked. 2. Once done, shred the chicken and keep the stock (yakhni) aside for later use. Making the Soup: 1. In a separate pan, add the shredded chicken and a pinch of salt (adjust to taste, not too much). 2. Add Mushrooms too if you like. 3. Add 1 tsp black pepper and the reserved yakhni to the chicken. For the Sauces - Add 3 tbsp dark soy sauce, 6 tbsp light soy sauce, 5 tbsp chili sauce, 1 tbsp brown sugar, and 3 tbsp vinegar & 1 tbsp chicken powder to the chicken mixture. - Stir well and bring the mixture to a boil. Vegetables: - After the sauces are incorporated, add your choice of vegetables (carrots, cabbage,capsicum , etc.). Thickening the Soup: 1. Mix 4 tbsp cornflour with ½ cup water to make a slurry. 2. Gradually add this to the soup while stirring to thicken it. Finishing Touch 1. Beat egg whites and slowly pour them into the soup, stirring continuously to create silky ribbons. 2.
