Why the polishing step before filling with paint, that doesn't make sense to me, surely it's better to 3000 grit, then paint, denib, scrape high spots, 2500 grit, then 3000 grit again, then polish?

Never sand at an edge you need to buff that out the paint is gonna look Matt and you will see sanding scratches under sunlight
