Heat a non-stick pan and brown the beef for a couple of minutes. Transfer to the slow cooker. Add the onion, garlic, and mushrooms to the slow cooker. In a jug, whisk together smoked paprika, thyme, dried parsley, Dijon mustard, tomato puree, balsamic vinegar, Worcestershire sauce, soy sauce, and beef stock. Pour over the beef and stir to combine. Cover and cook on low for 7–8 hours or high for 4–5 hours, until the beef is tender. Mix the cornflour with 2 tbsp cold water to form a slurry. Stir into the slow cooker and cook for another 10–15 minutes to thicken. If your slow cooker pan is compatible, you can transfer to the hob and simmer for a few minutes. Just before serving, stir through the reduced fat crème fraîche or soured cream until silky. Cook the rice according to packet instructions and steam the green beans until tender.
