Umami Packed, As Comforting As A Weighted Blanket, and Perfect For Cool Weather Days. Full Recipe Below. Makes 4 - 6 large servings 1/4 cup olive oil, divided, plus more for drizzling 1/2 medium red onion, diced 3 pounds mixed mushrooms (as many kinds as possible - pick all your favourites), sliced and divided 1 tablespoon minced fresh rosemary leaves 2 tablespoon minced fresh thyme leaves, divided 4 garlic cloves, minced 1 tablespoon balsamic vinegar 5 cups chicken stock 1/2 cup heavy cream, plus more for drizzling 2 tablespoons butter 1/2 cup grated parmesan cheese Zest of 1 lemon, grated Sea salt and cracked black pepper Cheesy Thyme Bread 1 small loaf bread 2 tablespoons garlic butter, softened 1 tablespoon chopped thyme leaves 1 cup grated gruyere cheese Preheat your Traeger Grill to 375 degrees F and line a sheet pan with parchment paper. Divide the sliced and prepared mushrooms into 2 parts, about 2 1/2 pounds for the soup and about 1/2 pound for the topping. Place the topping mushrooms on the sheet tray, then coat with 2 tablespoons olive oil, and add 1 tablespoon thyme leaves and season with salt and pepper. Place on your preheated Traeger Grill and cook until browned and crispy (just keep a close eye on them, and when they’re crispy, they’re good to go). Heat a large pot over medium-heat, then pour in 2 tablespoons olive oil. Add the onion, season with salt, and cook until softened and translucent, about 5 - 7 minutes. Add the mushrooms, and cook until starting to caramelize, about 10 - 12 minutes. Add the herbs and garlic, and cook for 2 minutes, stirring, then add the balsamic vinegar. Go in with the stock, and bring to a simmer. Cook for 5 minutes, then transfer to a blender and blend until smooth. Pour back into the pot, then add the cream, butter, parm, lemon zest, and season with salt and pepper to taste. Place back on the heat over medium-low, and let gently blip away for 10 minutes. Cut a loaf of bread in half, then slather on the butter and top with the cheese and thyme leaves. Place on the preheated grill and cook until melted and golden, then cut into strips. Divide the soup into bowls, then top with a handful of roasted mushrooms, a drizzle of olive oil and cream, a crack of black pepper, and serve with the cheesy bread.
