Oroshi Soba 🇯🇵🍜 Had a similar soba to this in my travel to Echizen, Fukui in Japan! The grated radish adds a nice refreshing flavor to the soba and I decided to add soft shell crab tempura for crunch as well 🦀🍤 INGREDIENTS Noodles: - Soba noodles (buckwheat noodles) Soba sauce: - onion leeks - kombu kelp - shiitake mushrooms - sake - soy sauce - mirin - sugar - dashi powder - water Tempura: - Soft shell crab - Tempura flour - Plain flour - Egg - Vodka - Water Other toppings: - Bonito flakes - Grated radish - Onion leeks, sliced INSTRUCTIONS: - Make soba sauce by combining all ingredients listed under “soba sauce” in a saucepan/pot. Add enough water so it’s more like a broth. Let simmer for about 20mins, strain and set aside. - Make soft shell crab tempura by combining tempura flour, egg, vodka and water. Coat crab in plain flour, dip in wet batter and fry at 165C for 10-15 mins or until golden and crispy. Make sure to drizzle over tempura batter while frying to get crispy bits. - Boil soba noodles according to package directions. - Top with sliced leeks, grated radish, bonito flakes and your tempura crabs. Add your sauce, serve and enjoy!! #japanesefood #cookingasmr #asmr
