Duck is my favorite meat, and it had been a long time since I’ve had some, so I was really exited for this. And I wasn’t disappointed. The Sichuan peppercorns go so well with duck it’s fucking amazing. And with that miso burnt pumpkin purée, inspired by @dirtykoreann , it’s just a great dish. A few things to improve : - more peppercorns on the duck, I was afraid that the flavor would be too intense but it was kinda the opposite. So cover that mf breast in the spice mix - less salt in the purée, because the miso is so salty, you don’t have to salt the pumpkin first - more acidity, the pickled onions weren’t enough. Maybe some lime juice in the purée ? Otherwise I’m really happy with the dish, and I’m definitely making this again. Anyways, here’s the recipe : 1 duck breast, salted on both sides for at least one hour before cooking For the spice mix : I used equal parts or green and red Sichuan peppercorns, coriander seeds, cumin seeds and Kampoot peppercorns. For the purée : 1/2 a pumping, roasted until tender 3 cloves of roasted garlic 1 Tbsp white miso Fresh ginger to taste (about 1 Tsp) Add cream, blend and ad more cream until you achieve the desired consistency Garnish with fresh chili, arugula and pickled onions #duck #pumpkin #miso #aesthetic #vibes
