When people say “caramelization”, what they often mean is mainly the Maillard reaction. Both the Maillard reaction and caramelization are similar in that they both lead to food developing a brown color. For that reason, they are more broadly called the Browning reactions. They are different reactions, but both require heat and lead to the formation of new molecules. Caramelization just applies to food that only contains sugars, more precisely carbohydrates, and is the process behind turning table sugar into caramel, for example. With most other foods, The Maillard reaction becomes more important. It was named after the French chemist Louis Camille Maillard who first published in 1912 a paper describing what happens to simple sugars and amino acids, the building blocks of proteins, in food when cooked. Most food contains both sugars (carbohydrates) and amino acids (proteins). But both caramelization and the Maillard reaction can happen at the same time in the same food. Depending on the food you cook, sugars can start caramelizing or reacting with amino acids or both at the same time.
