Timballo di Pasta | A True Neapolitan Classic and My Nonno’s Favourite Golden on the outside, rich and comforting inside — this is the legendary Timballo di Pasta. A baked pasta pie layered with slow-cooked ragù, cheese, peas, mushrooms, and egg pappardelle. A true showstopper on the Neapolitan table, and one of my Nonno’s favourite dishes. Ingredients (6–8 pax): • 500g egg pappardelle • 500g mixed mince (half pork, half beef) • 100g green peas • 300g mushrooms • 1 passata • 150g cheese • 20g Parmigiano • 120ml cream • 2 carrots • 1 onion • 1 celery stick • 1 egg • 1 glass red wine • Olive oil, basil, salt, pepper Instructions: Dice carrot, celery, and onion very fine. Sauté in olive oil 3 min, add mince, cook 5 min, deglaze with wine. Add peas and mushrooms, cook 5–7 min, then stir in passata. Simmer 30–40 min. Cook pasta al dente, drain, and mix with sauce, cream, cheese, basil, and egg. Keep some sauce aside. Layer pasta in a baking dish, top with remaining sauce and Parmigiano. Bake at 200°C for 10–15 min until golden. Rest 15 min before serving for the perfect slice.
