I’ve always heard/understood it was the sharpness of the blade. The less shredding the knife does (a sharp one slices instead of shredding) the less juice gets dispersed in the air around it

chopping onion trick - slice the first bit and eat it raw, then carry on chopping up and you shouldn't get watery eyes. works for me anyway

A sharp knife works. Blunt knife sprays the onion juices everywhere which makes you cry.
